Today I tested the best grade of steak to be dry-aged. To find out which one is more worth doing I did the most popular grades of beef in the US. Prime, Choice and Premium. The results were awesome and now I know which one I should always focus on.

    Not gonna lie, the premium grade looked way better then the prime. It even had better marbling. USDA seems to miss something

    Hi Guga, I follow your video and Umai instruction to dry-aged a piece of boneless ribeyes usda prime for 42 days. my result came out flavorful, but not tender, it has more of a jerky taste. the weight before is a little over 2.1 kg, and after is 1.6 kg, the loss of weight is about 25%. what have I done wrong? should I dry-aged it less time like 28 days?

    In Canada we have A/AA/AAA/Prime Grades. But the grades in Canada don't allow for older cows, yellow fat, or dark coloured meat whilst in the U.S. they do.

    Don’t throw away the rind you trim off the dry aged steak. Use it to make a Pho broth or other beef stock instead of bone. It is a deep rich flavor and that way you don’t waste anything.

    Guga, can you do a video on why you use Gradn western? I ordered a premium strip loin from them, and im excited try my first dry age, but it was just super expensive compared to others for seemingly the same thing. Im guessing its because its also wet aged beef, but to me its a huge jump between suppliers
