Dry Brine EXPERIMENT, Only SALT! 24 hrs to 1 MONTH!

The best thing you can do to a steak is to dry brine it. However I never seen how long is too long to do it. Today I push the limits on dry brining a steak to see what happens when you do it for a whole month.

    soaking the month long brined steak in water, before you cook it, will remove much of the salt and it will taste good. Give it a try

    From what I learned at a butcher shop I worked at, dry aging beef is nothing difficult to do in the proper atmosphere. We did it to different cuts including prime rib and filet. We never put salt directly on the beef itself, but put the different cuts of beef in a container lined with bricks made of salt and with slight air movement for various amounts of time. The longer the more expensive. Some of these cuts would sell for as much as $100 per pound.

    Do you cover the steaks in the fridge while dry brining? I've been told that if you don't you can get "refrigerator smell" ( whatever that is) on the steak. Also, is a cooling rack necessary?

Quick question, when I salt brine my steaks on a rack, the next day i always find juices have dripped from under it, does this make the steak less juicy or is it fine? Would it be better to salt brine it one side at a time so that the bottom doesn't spill out?

    guga uses a truckload of salt and wonders why 3 days comes out like a salami...I've dry brined a 2" thick tomohawk close to 36 hours with no issues but used A LOT less salt...just enough to season the steak normally

    Nah, i see what the problem is. The Salt just have to last 7 days, cleaned the meat and leave it for a month, open the Refrigerator every two days for 3 to 5 minutes. Will be great and delicious taste. If you gonna leave the salt for a month, not on the meat, that is why was hard and awful taste. The Salt have to be on the bottom not on top of the meat. Good comparison, you help us do not make the same mistake.

    Guga, I just did the 24 hour dry brine, Oven at 275 for 30 until 135 internal, reversed seared with garlic and rosemary, and topped with the butter of the gods. OMG guys! Amazing!!!!!!

    I leave mine in the frig for 3-4 days. I don't salt mine though. Darkens just a little. Tender and taste great. Medium rare.

    These people are food ignorant. Salt does not eat meat, after a month in salt all the liquid of the meet is gone, dries... that's why the meat reduces in size and hardness. At this point it's not steak anymore but PROSCIUTTO.

    Did this 1 day technique to the T and i regret every moment of it. I enjoy salt, but how anyone is even able to 'enjoy' a single bite of this has the most unbalanced taste buds imaginable. You can't even taste the steak, it's all salt. $20 in the garbage.
