    Both of the enzymes are proteins that destroy other proteins. They're made to not destroy themselves or (most) proteins from the same organism. Seems to me that when the papaya and the pineapple are mixed, these proteins recognize each other as foreign and quickly destroy one another, leaving none to destroy the proteins of the meat.

    Actually bee honey also has the similar effect on tenderizing steak just like pineapple and papaya. Kinda want to see guga use honey to tenderized eyeround next time. Never saw anyone do such a experience before.

    The problem with the marinade is that you put in the green skin (with more enzymes) but giving that green and nasty taste. If the pineapple fruit was used alone, or papaya used alone - no skins - then both should have had excellent results. And do not wash off the marinade - that is like adding in chlorinated bleach city water into the steak, washing away any fats, oils, blood meat and fruit flavors. No wonder they probably tasted like raw baby diapers. Go back to natural marinade, no wash, and either sous vide or BBQ and sear - and you will have a great steak. The ancestors most always have the best methods with simple techniques. And no pounding/tenderizing together with marinade. Tenderize/pound and cook - or - marinade and cook.

    While I know this was supposed to be the finale, one thing I would love to see is an overnight Coca-Cola marinade. I heard that because of how acidic coke is, it will break up the fibers very nicely, and even give a bit of a sweet flavor to the meat like a lot of chinese sweet+sour dishes.

    Have you tried putting a whole section of strip loin in the pineapple, then slicing it into steaks? That way, the over-tenderized, "powdery" surface would only be along the edge of the steak.

    You WAY OVERUSED the Jaccard. Guga, You basically pre-chewed that steak. A steak that thin 6-7 times at the most you hit that steak at least 20 times. You turned it into Hamburger as Angel described

    I made a steak and tried tenderizing it using pineapple, i left it for about 15 minutes and it was horrible it dissolved in my mouth and tasted like dust and had a grainy texture

    As for the fruit soaked steaks go, why not pat them dry with paper towels and hit them with a lot of salt before grilling to get a crust (similar to boeuf bourguignon being drained and patted dry before searing and braising)? On a side note, I guess this is why pineapple works wonders for Amoebiasis.

    The one jaccard one should have gone wayy shorter in the pineapple/papaya because of the extra surface area. To retain the juices I would put the Jaccard in a pan instead of on the grill. I guess it's a limitation of the method.

    14:01 Probably both enzymes were supposed to work at a certain pH each one that got altered by mixing both of them, so the actual enzyme activity was lower.

    I don't if he has one made. The Needler steak in a Sous Vide (spelling) than torching it my solve the problem. I do mine eye of round on my George Forman for like 4-5 min (depending) on thickness to med-rare. Also I use barbecue sauce when I eat it. With the Needler I do 2 passes one length wise and one width wise than flip and do the same. This also helps with marination of non high acids items.
