    I'm italian, and here at every fest we have porchetta, I ate thing three hundred times, but this Is the next level! One great thing that Is different Is that in Italy (sepcifically Pise, Tuscany) we use the entire pork and we use to put an Apple into pork's mouth

    No offense intended, this is probably really tasty...but the filling is not authentic, in my experience. Salt, pepper and rosemary (a fair amount of it) are the standard. The recipe uses a suckling pig as well, but that’s probably really tough to get in the states, and this is a good alternative. Nicely done with the skin. Another tip to get it crispy: season it, and leave it uncovered in the oven overnight. (Fridge if you just can’t) This too dries the skin and is less work than scraping. (Although I’ll give that a go next time in addition)

    in italy we eat it in a ciabatta bread, not toasted, not buttered. we don't even chop it, we just slice it and we can slice it like 1/4 inch thick cause it has no stuffing, just herbs. primarly rosemary and black pepper.

    Italian porchetta has to be done with whole piece from belly to loin removing ribs. Of course using belly only makes it more juicy and simple to make in terms of temperature management.

    I am from Veneto Italy and that cannot be called porchetta please, porchetta doesen't have skin on or at least not that crispy tbh even the filling is wrong, same thing for the cooking process because porchetta is cooked slowly on an wood barbecue rotating usually its done with a whole pork. this is definately a deliscous dish but thats not porchetta man.

    Italian friend here! Im from Rome and in some places around here porchetta is the signature food. Your porchetta recipe was astonishing! A little note on the bottom, we have two different kind of porchetta that we eat: one is stuffed like the one you made it, and another one is more "vanilla" where we basically just cook the porchetta letting all the juiciness of the meat to stick inside, and making also the skin as crunchy as possible,and nothing else,so without any stuffing... and that is the one that we use to eat inside the sandwiches! Actually both would be awesome inside a sandwich to be honest, we all know that! A lovely hug from italy! Keep up the good work:)
