Why you should NEVER Butter Dry Age STEAK | Guga Foods

After many dry aged experiments today I test a beef tenderloin 2 different ways to find out how good butter dry age really is. To keep the test consistent, I used one tenderloin for this experiment and the results were eye opening.

    We just tried the butter aging last weekend - after we already collected some experience with wet aging in the last year. And the difference was HUGE. Maybe because we bought salted butter from the store. And used ribeye both times, not tenderloin. And although a lot of people accused us of wasting butter, I don’t see it that way. We used it to make food. And the waste of it was organic, and not another plastic bag. But man: you don’t do that everyday.

    I tried this, 4 sticks of butter and about a 1/4 inch thick coating around a ribeye and vac sealed, after about 40 days I noticed some green color around the edges, then at 60 days I cut the bag open, I about puked, it was rancid and I took a few hours to get the smell out of my nostrils. I am not sure why it did not work, I watched the video's and read up on it.

    Butter dry age works well in a restaurant, or commercial setting with no membrane.. just placed in cold storage. This allows dry age process without the dry edges of pelicos on the outside... It shouldn't oxidize in the butter, not sure what happened to yours.

    Guga, what the hell man? Running the numbers...the cheapest butter is $2.50 a pound giving you 367 grams of butterfat. The cheapest heavy cream is 4 to 5 dollars for a 32oz carton, giving you 353 grams of butter fat.

    Well the other guy who butter aged did it in a controlled environment. Which in turn allowed him to use the butter. Plus he used salted butter. There’s too many variables between how you did it and how the other guy did it. So I wouldn’t trust your title

    What about vacuum sealing and age it in butter? Would there be a difference then? I saw where they did that and cooked in the butter also. Supposedly it was more buttery since it was vacuum sealed. Awesome video.

    Butter doesn’t putrefy very easily. A lot of people leave some at room temp as spreading butter. I would be more concerned about the part that came in contact with the raw beef.
