35 Days FILET MIGNON Dry Aged Experiment!

Filet Mignon is already tender. Is it worth dry aging it to make it even better that it already is? There is only one way to find out and that is to run this dry aging experiment. On this video I dry aged a tenderloin for a total of 35 days. It is easy and simple to dry age beef at home.

    to be completely sure of this comparison shouldn´t you have used the same piece of meat? I mean you use 2 different tenderloins so there is a chance of different tenderness and taste to begin with. I have tried to cut a tenderlion in 2 and used the sous vide on one half and the other half in the owen, to taste the difference. but you have to use the same piece of meat to be exact.

    In ireland its pretty much standard practice to dry age steaks for 30 days. Most steaks off of the shop shelves have been aged for 30 days already

    I just finished my 1st DIY 32 Days Dry Aged FILET MIGNON and wow even the beef not cooked after cutting it smells so good. Sous-Vide it for 2 hours and the taste is out of this world.

    I have no idea why but a thick cut bone in my strip is my favorite steak prime grade is my favorite I've had wagyu before but it's just not my thing there's no balance of meat and fat and nothing to chew I like to have meaty flavor and texture and plus I love rare steak wagyu can't be rare

    Patrick Schol it is not about how long you cook it, it is about how to tell when it is finished. For normal steaks it’s very easy to touch and tell if it’s medium rare or medium or well done

    I’m Sous vide cooking my dry aged tenderloin tonight after 21 days (also after removing the cap meat for a roast). Started with 5 lbs, had 4 lbs at the end. Was as conservative as I could be with the cutting and ended up with 1.5 lbs pellicle and 2.5 lbs of filet in 7 2-inch pieces. Freezing the pellicle to grind for burgers later, along with 5 steaks. 2 are in the bath at 131 right now.
