I love trying new things and today I am doing this centuries old cooking technique which I have never done. I sounds so good and I hope it is as good as it sounds. Cooking steaks and any type of protein confit has been done for centuries and many different countries and today I test it to see how we like it.

    On the flavor, an 18th century cook wouldn't have served it as is. They would have accompanied it by a complicated, strongly-flavored sauce, and probably also heavily garnished it.

    To help answer. It's the method. Oil and water can't mix without emulsion. So the slow confit just did a reverse sear type of slow cook and dry brine helped tenderize. The only benefit was the flavored oil did flavor the meat. Still for me a dry brined Costco prime new York reverse seared over smoke and coal with just salt seems to reign Supreme in my book. Let the beef do the work.

    If you want to try confit, why not go all out and use Wagyu beef fat? That would be a more interesting experiment and more classic way to confit.

    The only thing we use extra virgin for is a non stick for the grill. But use very little or your your steal will taste nasty.

    This is a clown confit. Duck or Goose legs and thighs are used. They are first curd first with salt then it is slow cooked in lard for hours most of the time in the oven. Just google Duck confit. They never would’ve confit a Porterhouse ever. The whole point is for it to full off the bone then it is shredded. Was used for salads or to A complement Duck breast. Buy the way in the day they didn’t have all these different oils. They still serve duck confit in France to this day done the old school way. They don’t butcher it for ratings on ILmines. I’m sure he appreciate someone butchering one of his native dishes.
