    Dude, im from canary islands and mojo sauce is an endemic sauce in here , instead of the lime and orange juice is usually used wine vinegar , and instead of parsley , its coriander with garlic , lots of it to make that unique flavor

    One of the most important parts about this recipe, I think, is the bread. I would bet that this bread came from a small, independent bakery that bakes everything fresh every day using only natural ingredients, not a big national chain grocery store bakery that uses frozen dough with preservatives. I’m definitely going to make this recipe, if I can find sour oranges.

    I have no doubt that recipe is extremely delicious but for more cuban authenticity you can use coriander instead of parsley in the mojo and also add it to the marinate. Coriander is most commonly used in cuba than parsley and it has an amazing flavor. Thank you Guga for another mouth watering video.

    2 questions, to estimate time, how long was your cook time and did you say rest 3 minutes or 30? Sounds like 3 min is too short, but you're the chef. Thanks; going t ok try it for my moms B'day this weekend

    Assuming I wont get a response. My guess is around 40 minutes per pound and rest 15-30 minutes. Idk if I'm going to bring my temp to 150/160ish before i pull of the bbq, we'll see. And im going to try my searer on my gas grill to skin

    Guga I watched a video on ILmines, they were comparing wagyu beef vrs American venison and they are saying the wagyu is tough to cut and the venison is much tender and flavorful than wagyu. Please do a video of it, I trust your opinion.
