I Dry Aged EVERY Meat, ATE them and this happened!

After so many request to dry age every meat I decided to make it happen. Not only did I dry age them but also ate it! Man this was the most interesting experiment I have ever done and I am glad now I know what happens when you dry age every meat.

Shrimp is better dried in the sun. I remember when I was in south India I used to see a lotta coastal folk dry tiny shrimp outside their houses...once dried its mostly crushed into smaller peaces & used in various dishes....which I deemed very delicious.

I was never a fan of Salmon. Always found it sort of bland when cooked and would rather have red meat. I had dry aged salmon at my fiends house about 2 years ago and it changed my whole perception of the fish. It was one of my favorite sushi prior so I love the flavor but it always felt dulled when cooked. Not when dry aged. It was eye opening.

when i dry age beef tenderloin, i put in the umi bag for 2 weeks only, then use a real vacuum bag for 4 more weeks. you still get the age taste, but no pelicos as the remaining moisture reconstitutes all the very dry edges. everyone loves this method and no waste.

South African here! That dry aged tenderloin was a short distance away from being one of SA's greatest culinary inventions: Biltong! We take some quality beef, season them like crazy, then we hang them on hooks in a dry box with a controlled light in there to keep the heat steady. We keep it like this for quite a while, and then you end up with the most amazing dried meat that you will ever eat. Jerky can sit this one out, Biltong is on a whole new level. I'm considering to go out and buy some now just thinki8ng about it. In this case however, i would recommend not cutting off the dry edges, it gives it quite a nice texture, and that's where all of the spice will be! throwing on some chilly and maybe some cut up chorizo in some oil, then you are gonna be the top dog at your next braai! (BBQ but subjectively better). Edit: Don't cook it after you are done! and also, the oil and chorizo is just a fun way of eating it. The norm is just taking it off the hook and taking a bite.

The ground beef looks dope. I used to order mid-rare burgers but had to stop because you never know how adulterated the beef is, he's going the right route by grinding it himself. If you can find a local butcher you can get the same quality without needing the equipment.

i dont want to sound like some internet troll but dry aged lamb is actually really good, from the country of Faroe islands it's actually a national dish and the saying goes "Green is good" the difference here is that it's dried in a vacuum bag instead of hung up to dry, i recommend you try at least a bite of it even if the chance were there to make you sick. Just don't eat the green bit, no one eats that.
