Wagyu Cheesecloth DRY AGE Experiment | Guga Foods

Dry age is amazing, however just like fine wine it takes time. But this magic cheesecloth dry age idea was brought to my attention by one of my subscribers to test. This is what happened with this experiment. As a side dish I also did an amazing Tortilla Española to go perfectly along our amazing dry aged steak which only took days.

    So, coming from someone from Spain... The execution was fine, maybe you overcooked it a bit, but you never cut the potatoes into cubes, and even if there are comercial brands of only potato its important to add onions as well. Plus, here in Spain we dont put anything in the tortilla itself, we make 2 or more and we put the rest of the stuff between the tortillas.

    I don’t know who told you that we spaniards put ham and cheese inside the tortilla, but that is a crime, we just like it with some onions. Also, we are use to call it “tortilla de patatas” or just tortilla.

    Actually spanish omelette in spanish isn't named tortilla española, that'd be kinda funny. It's called tortilla de papas ('tato omelette). Also i suggest you try it with bits of spanish chorizo, onion and Green pepper in it Great video!

    Hey Guga, huge fan here. Could you please try wrapping a picanha with wagyu fat, tie it up with butcher's twine and THEN dry age it? My friend and I have a theory that by doing so, the fat becomes the pelicose and you don't lose meat at all. What do you think?

    The Tortilla Española was AMAZING! I do not like ham, so I used Deli Turkey and I also included a few Jalapenos with the potatoes near the end. WOW! That is a make again and again and again. I served it with Filet mignon steaks grilled medium rare.

    The science of it... It's basic. The cheesecloth just was able to "wick" the moisture out faster. It does not age it faster.

    You need to redo this. Cook the dry aged faster. It's such a small piece of course the moisture is going to pull more. Not a fair comparison. Right off the bat I would choose the more rare one.

    The phenomena that you noted with the temperature being the same, but the steak looking more done has been pretty common in my dray-aging experiments over the past several years. The ‘color’ of a 30-deg.F steak that has been dry-aged is different from the color of a comparable yet un-aged steak. My conjecture is that this is due to the change in amino acids and the moisture level of the ‘aged’’ meat. The Maillard reaction proceeds more quickly too, so for a comparable crust, you’d expect the transition zone to be thicker in the aged steak - which is what you saw. I see it too in my experiments. You have to adjust your sous-vide temperature and browning times accordingly, if you want to get the same interior coloring. P.S. I love your channel.

    Try Iwagyu, guga. It's 100% Swedish beef that has been fed a unique diet to create a beef with a marbling pattern of A4 but the actual intermuscular fat is very very low. About A3. It looks very pretty and tasty. It looks very similar to higher grades of Australian or American Wagyu but probably tastes better.
