    Second steak says reverse seared for 25 minutes at 250 degree. Third steak says reverse seared for 1 hour at 350 degrees? I am confused. That thing would surely be a brick right? Perhaps a typo?

    Smoke an steak, Catcher the juice and fat that drops, and after smoking you put the steak Into the fat juice mix for 2 hour in the refridgerator. At the end put it out of the Mix and get an nice crust on it.

    I think some people have different preferences. I agree that the reverse sear method produces a more juicy steak however, I feel that a “better crust” that you described on the direct heat is what I desire more than a juicy steak. A high quality steak with direct heat is still very juicy and that crust is what dreams are made of. Just my opinion, some prefer juicy and tender. The reverse seared steaks are always good, I just personally prefer a really good crust.

    For all the chefs that cook steak frequently, I have a question. I’m learning how to cook and I want to try to cook a steak. Should I start with a cheap steak to not risk messing up an expensive one or should I buy an expensive steak and be confident in the skills I’ve learned already?

    Cooking is a lot of trial and error. I would suggest starting with a cheaper cut and once you feel comfortable with your timing/heat control you can try more expensive cuts.

I'm not working atm so I got the time unfortunately. And man you are awesome. Watching your shows has upped my game SO much. Sous vide. Pellet smoker. I got em both and been trying to keep up and man the results are deeeeeeeelicious lol I know lame reference. But man you're great. I hope you don't stop on your channels.
