I cooked MOST EXPENSIVE Pork, Better than WAGYU!?

Today we were lucky to cook and taste the most expensive pork, aka ibérico! This was an awesome experience and I am happy to share it with you. When you get great quality pork like this cooking it is something that you treasure it for ever, specially when you get to share with family and friend.

    Regarding the corn, try this. Cover the corns in butter until you cannot see the corn, put some salt on it, cover it tight in some aluminium foil, put the corn (corns) in a dripping pan and cover it in horn coal. leave it for like 30~40 minutes and taste. It's divine.

    I have been reading recently that cooking the fattier, more expensive cuts, more well done is better. It lets the fats render. The leaner cuts benefit more from being undercooked...

    Not that I ever even set my eye on it, but acceding to an episode of original run Japanese iron chief, a small piglet that used to make Jinhua ham cost the same as a whole Waygu cow. It would make it far more expansive than this.

    BTW my guess is these are very rare special authentic ones you simply can't find on the market today, as there is no way these are used to make the cheap Jinhua Ham on the market now.

    A lot of people watch this just because we like to see people enjoy the absolute top of the meat world, literally the finest cuts of beef you can possibly have, and of course to see the food experiments. Something that is really understated here is the amount of skill Guga has. His butchering, cooking the meat perfect every time, giving these cuts the respec they deserve. Just phenomenal. Those are some life goals.

    bellota ibericos live in open pastures, along side rats. Pigs eat rats and get trichinosis. you eat iberico and get trichinosis aswell.

    My favourite pork is actually wild boar because of the intense pork flavour. My favourite recipe for pork tenderloin is to marinate it for two days in freshly ground black pepper, garlic and onion purée, sea salt and red vermouth. This is cubed, and seared in herb butter. I then slow cook this in some of the marinade, slices of apple, pear, roast mushrooms, shallots, fresh chopped asparagus, and potato. This is topped off with a crushed walnut and and crumbly white cheese crumble. It's rather nice.

    I always laugh at how eager any supporting cast is for meat. Guga must cook some bomb, mind blowing food. It's so good, you forget your manners, or sense of rationing for everyone else and gobble up as much as you can. This always happens when my cousin, or tia, make tortillas. They are so good!     Damn I just checked the american websit for the Iberico secreto and I almost FAINTED!!!! 199USD for a 16oz piece of meat? WTF!!!!! I mean WTF!!!! I was thinking that here in Switzerland it was expensive, wont tell you how much I pay for it just yet, but DAMN!!!!! Anyways like always when you want to find old thigns you dont, anyways I found a online store that sold it for 20euros per KG, and to my self I though, thats more like it as I pay it about 30 euros per KG (32chf). But now I see in the US this particular link/store sells it for over 400 per KG I know im not paying too much. Just so you know you can find it cheaper, I searched it just now and found for around 50usd per pound (it is frowzen but its less than 1/4 of its fresh price on the page guba linked). Anyways I suggest you do some research cus you can find it for cheaper, and trust em its worth it!

    I just had my girlfriend over or brunch, I made us cheap 6 dollar shell steak and some fry udons from a package I have and fried egg. But my father came back home, my mother and father dislike my girlfriend because shes messy sloppy sweaty smelly, and doesnt bathe/shower, basically unhygienic. I was hoping we listen to classical music or watch japanese steak videos, sip my cheap 6 dollars frontera malbec wine and she'll leave before dad gets back and I might even have time to puff a cheap dutchmasters cigar out side. Now my father telling me how he and mother doesnt like uncleanliness etc... I had to get her out. She left now, she knows she's not welcome.
